4) What One High-Saturated Fat Meal Can Do

According to one small study, eating just one high-saturated-fat meal can hinder the ability of HDL or "good" cholesterol from protecting against clogged arteries. Three hours after eating a special cake and shake meal made with saturated-fat-rich coconut oil, the participants’ artery linings were unable to expand sufficiently to increase blood flow to the body’s tissues and organs, and after six hours, the anti-inflammatory qualities of HDL cholesterol were reduced compared to those eating a similar meal made with polyunsaturated fat.
