Low Fat French Toast

French toast is one of my favorite breakfast treats, but it can be costly in terms of calories, fat and cholesterol, especially if you add high-fat toppings such as whipped cream or butter, then drown it in a lake of maple syrup. Here, I use egg substitute in place of whole eggs, and top my French toast with some confectioner’s sugar and fresh fruit. If you're a syrup fan, use it sparingly or try a fresh fruit purée or compote instead.
