Low Fat Cooking New Year's Resolutions Blog by DeAnne

Out of Sorts

For the past couple of days, I've felt out of sorts. Guess I have one of the millions of viruses making the rounds. I haven't even felt like eating, so I know I must be feeling bad! I skipped my walk this morning and ended up napping for a couple of hours.

When I felt better today, I used up a rotisserie chicken and made chicken soup with rice, which is just one thing you can do with a rotisserie chicken. I love using up leftovers. I have heard of people who never eat leftovers. Can you imagine? That's a lot of food going to waste. Many dishes are better the next day, like vegetable soup, meatloaf, and in my opinion, baked potatoes.

We all have a repertoire of favorite foods that we eat time and again. For me, it's fish, seafood, chicken and fruit. We usually have spaghetti once a week. In the summer, I grill out two or three times per week. But soon, our favorite dishes get boring and it's time to incorporate new dishes. That's what I like about the Low Fat Cooking site. There's plenty of great recipes and ideas.
