Low Fat Cooking New Year's Resolutions Blog by DeAnne

Skillet Dinner

I've been looking at some of the boxed dinners and found some that are low in fat. So for dinner, I'm making lasagna in a skillet. The mix itself has 0.5 grams of fat and I'm using ground turkey. Hopefully, my kids will eat it up.

I've noticed lately that when I'm extremely tired or even cold, I tend to eat something to boost my energy or get warm. Even though sugar can give me boost, I need to rest instead. When I'm cold, I need to throw on a sweater or perhaps exercise. Funny how I think food can cure all that ails me. I agree that a good balance of foods can affect your health, but I'm talking about overeating.

Since it snowed here in the St. Louis area, I'm in the mood for baking. I've got some blueberries in the freezer, so I'm going to whip up some blueberry muffins tonight and freeze half for later, so I won't go nuts and eat them all. Fiona has a recipe for a no-bake Low Fat Lemon Pudding Pie that looks so yummy, but I need to run by the grocery store first to pick up a few ingredients.
