Extreme Self-Care Day

I am declaring Extreme Self-Care Day (ESCD) for all stressed out parents, especially those of us who are primary caregivers. And if you have to ask what a primary caregiver is, no offense, but you are probably not one.

On ESCD, we vow to:

  • Cook up something healthy and low fat for dinner
  • Eat a piece of dark chocolate, savoring every melting morsel
  • Leave the dishes in the sink overnight
  • Soak in a bubble bath after the kids go to sleep
  • Watch something incredibly indulgent on television
  • Forget whatever lousy thing happened today (at work, home, or both)
  • Put on some music from your heyday (that would be the 80's for me)
  • Go to bed early and wake up a new person

Tomorrow my son has the day off, so I am going to walk around the neighborhood while he rides his bike. Since Claire will be at school, it's a chance for us to have one-on-one time.

I baked catfish fillets tonight with a touch of olive oil and seasoned salt. I added leftover vegetable soup, and made julienne potatoes from a mix and simply left out the butter. By tossing the butter, I lowered the fat in the potato mix and they tasted pretty much the same.

Tomorrow, I will be cooking something completely different. Stay tuned to find out what's on the menu.
