Kid-Friendly Meal

I'm concentrating on the kids tonight. I'm making Low Fat Beef Tacos. For dessert, I'm whipping up Low Fat Fudge Brownies. Because I have a problem with sugar, I will be using Splenda for all of the sugar. Now the real test will be how the kids like it with the the brownies being both low fat and sugar free. Do you think they'll be able to tell the difference?

I will also be "cooking ahead." When things get overwhelming around here, I love having something ready. I'm putting together a nice vegetable soup, just to have on hand. I simply throw some beef bouillon cubes in a pot with diced potatoes, carrots and a 1/2 gallon of water, and let them simmer about 5 minutes. While still simmering, I throw in some pasta and diced onion, letting that simmer for about 10 minutes. I add one small can of tomato paste, cans of corn, peas, and green beans. Then I season the soup with a dash of oregano and basil, fresh if possible. Easy and fat free.

I'm drinking my water still, although today I'm not feeling like it. Sometimes I tell myself things like, "I don't want to." Why do I get so rebellious? I make my life more complicated than it has to be.

Confession time. I did not exercise today yet. I'm planning on exercising when the kids get home from school. They like to play computer games and watch TV after school, so I'm banking on having 30 minutes for an exercise tape.
