If you've never eaten roasted cauliflower, you're in for a treat. Roasting brings out a nuttiness in cauliflower, which is complemented by the sweetness of balsamic vinegar. Just a hint of olive oil, a couple of cloves of garlic, and some freshly ground black pepper are the only other ingredients you'll need for this tasty side dish.

Prep Time: 5 minutes

Cook Time: 25 minutes

Ingredients:

  • 1 head of cauliflower, cut into even-sized florets
  • 1 tsp olive oil
  • 1 tbsp balsamic vinegar
  • 2 cloves garlic, crushed
  • pinch Kosher salt (optional)
  • Freshly ground black pepper

Preparation:

Preheat oven to 400 degrees.

Spray a large rimmed baking sheet with cooking spray.

Whisk oil, vinegar, garlic, salt (if using) and pepper in a small bowl.

Place cauliflower florets in a medium bowl, drizzle with oil and vinegar, and toss.

Spread cauliflower pieces on baking sheet.

Roast for 20-25 minutes, until just tender. Turn once half way through.

Serves 4.
