Ingredients:
- 1 head of cauliflower, cut into even-sized florets
- 1 tsp olive oil
- 1 tbsp balsamic vinegar
- 2 cloves garlic, crushed
- pinch Kosher salt (optional)
- Freshly ground black pepper
Preparation:
Preheat oven to 400 degrees.Spray a large rimmed baking sheet with cooking spray.
Whisk oil, vinegar, garlic, salt (if using) and pepper in a small bowl.
Place cauliflower florets in a medium bowl, drizzle with oil and vinegar, and toss.
Spread cauliflower pieces on baking sheet.
Roast for 20-25 minutes, until just tender. Turn once half way through.
