Tomato Zucchini Gratin

Zucchini and tomatoes go well together in this baked vegetable dish. A little cheese and breadcrumbs on top adds a nice crunch.

Prep Time: 10 minutes

Cook Time: 35 minutes

Ingredients:

  • 2 medium zucchini, thinly sliced
  • 2 medium roma tomatoes, thinly sliced
  • 1/2 cup reduced fat shredded cheese
  • 1/3 cup breadcrumbs
  • Freshly ground black pepper

Preparation:

Preheat oven to 350 degrees. Spray a small gratin dish with cooking spray. Cover the base of the dish with sliced zucchini, then create a second layer with the tomatoes. Repeat until all the zucchini and tomatoes are used. Sprinkle with shredded cheese, breadcrumbs and black pepper. Bake for 35 minutes.
