Roasted Zucchini and Tomato Sauce

Roasted Zucchini and Tomato Sauce

There are so many ways to enjoy zucchini, and this sauce is one of them. For maximum nutritional value, choose whole-grain pasta. For something a little different, or for those who can't eat gluten, try this sauce over slices of polenta.

Prep Time: 10 minutes

Cook Time: 35 minutes

Total Time: 45 minutes

Yield: Serves 6

Ingredients:

  • 1 1/2 pounds zucchini, quartered lengthwise and cut into 1 - 1 1/2 inch sticks
  • 2 tsp olive oil
  • 1 26-ounce jar low-fat, low sodium marinara sauce
  • 1/2 cup dried breadcrumbs
  • 1/2 cup grated parmesan cheese
  • Freshly ground black pepper to taste

Preparation:

Preheat oven to 425 degrees.

Toss zucchini sticks in 2 tsp olive oil. Roast on a baking sheet for 20 minutes.

Remove from oven. Transfer zucchini to an 8 X 8 baking dish. Pour marinara sauce over. Sprinkle with breadcrumbs and top with parmesan cheese.

Return to oven and cook for 15 minutes.

Serve with noodles.
