Broiled Portobello Mushrooms

Broiled Portobello Mushrooms

Under the broiler or on the grill, these portobello mushrooms are simple and delicious, and a great hamburger alternative.

Cook Time: 14 minutes

Ingredients:

  • 4 large Portobello mushroom caps, wiped clean
  • 1 tablespoon of olive oil
  • 1 tbsp fat-free, low-sodium vegetable or chicken broth
  • 1/4 cup balsamic vinegar
  • 2 garlic cloves, crushed

Preparation:

Place mushrooms in a large bowl.

Whisk olive oil, vinegar, broth and garlic together in a small bowl. Pour over Portobello mushrooms, and marinate for 15-30 minutes.

Preheat broiler.

Place mushrooms on a broiler pan coated with nonstick cooking spray. Broil 6 inches from the broiler for 5-7 minutes each side.
