- 4 large Portobello mushroom caps, wiped clean
- 1 tablespoon of olive oil
- 1 tbsp fat-free, low-sodium vegetable or chicken broth
- 1/4 cup balsamic vinegar
- 2 garlic cloves, crushed
Whisk olive oil, vinegar, broth and garlic together in a small bowl. Pour over Portobello mushrooms, and marinate for 15-30 minutes.
Place mushrooms on a broiler pan coated with nonstick cooking spray. Broil 6 inches from the broiler for 5-7 minutes each side.
