Cook Time: 25 minutes
Ingredients:
- 1 medium head cauliflower cut into florets
- 3 cups baby spinach
- 1 cup nonfat milk
- 1 tbsp cornstarch dissolved in 1/4 cup nonfat milk
- 1/2 cup sharp reduced-fat cheese
Preparation:
Preheat oven to 375 degrees.Steam or simmer cauliflower florets on stove top for 4-5 minutes until just tender, adding spinach for final minute. Place cauliflower and spinach in 1 1/2 quart to 2 quart baking dish.
Heat milk on medium heat in a small saucepan until bubbles appear around the edge. Add cornstarch mixture and stir until thickened. Add cheese and stir until melted.
Pour cheese sauce over cauliflower. Bake for 20 minutes.
