Cook Time: 15 minutes
Ingredients:
- 2 tsp canola oil
- 1/2 cup onion, finely chopped
- 1/2 cup pre-sliced cremini mushrooms, chopped
- 2 cups fat free, reduced sodium chicken broth with defatted drippings from roast chicken
- 2 tbs cornstarch dissolved in 1/3 cup water
Preparation:
In a 2-quart saucepan, cook onions and mushrooms until softened. Add stock or broth and bring to a boil. Turn down heat and simmer for 10 minutes. Stir in cornstarch and water and simmer for 3 more minutes, stirring from time to time.Serves 6.
