Reduced Fat Mushroom Onion Gravy

Every roast needs some gravy, but gravy can be a huge source of fat. Make a lower fat gravy by using defatted chicken stock or fat-free chicken broth.

INGREDIENTS:

  • 2 tsp canola oil
  • 1/2 cup onion, finely chopped
  • 1/2 cup pre-sliced cremini mushrooms, chopped
  • 2 cups fat free, reduced sodium chicken broth with defatted drippings from roast chicken
  • 2 tbs cornstarch dissolved in 1/3 cup water

PREPARATION:

In a 2-quart saucepan, cook onions and mushrooms until softened. Add stock or broth and bring to a boil. Turn down heat and simmer for 10 minutes. Stir in cornstarch and water and simmer for 3 more minutes, stirring from time to time.

Serves 6.
