Green Beans and Leeks

A simple and nutritious side dish of sautéed green beans and leeks in a tangy tomato sauce.

Cook Time: 10 minutes

Ingredients:

  • 2 tsp olive oil
  • 2 garlic cloves, finely chopped
  • 3/4 pound leeks, cleaned, white parts only, sliced
  • 3/4 pound fresh green beans, trimmed and halved
  • 1 14.5 ounce can petite diced tomatoes
  • 1/4 cup fresh chopped parsley

Preparation:

Heat oil on medium in a large skillet. Add garlic, leeks and green beans. Sauté for 5 minutes, until leeks have softened. Stir in tomatoes, and cook for 2-3 minutes. Sprinkle parsley.
