Cook Time: 10 minutes
Ingredients:
- 2 tsp olive oil
- 2 garlic cloves, finely chopped
- 3/4 pound leeks, cleaned, white parts only, sliced
- 3/4 pound fresh green beans, trimmed and halved
- 1 14.5 ounce can petite diced tomatoes
- 1/4 cup fresh chopped parsley
Preparation:
Heat oil on medium in a large skillet. Add garlic, leeks and green beans. Sauté for 5 minutes, until leeks have softened. Stir in tomatoes, and cook for 2-3 minutes. Sprinkle parsley.Serves 6
