Black bean burgers make a great alternative to regular burgers. Even my hamburger-loving husband thinks these are really good. Perhaps a bit fragile for the grill, these burgers cook very well in a hot oven, or in a nonstick skillet for three or four minutes per side. Serve in a whole grain bun with low-fat sour cream, a slice of avocado, and plenty of salsa.

Prep Time: 15 minutes

Cook Time: 15 minutes

Ingredients:

  • 1 15-ounce can low-sodium black beans, drained
  • 1/2 cup dry breadcrumbs
  • 1/3 cup finely chopped onion
  • 1/3 cup no-salt-added tomato sauce
  • 1 tsp cumin
  • 2 tbsp chopped cilantro

Preparation:

Preheat oven to 400 degrees, and coat a baking sheet with nonstick cooking spray. In a medium bowl, mash black beans with a fork or potato masher. Add breadcrumbs, onion, tomato sauce, cumin and cilantro. Blend with a fork. Form into 4 patties.

Bake for 15 minutes. Remove carefully with a spatula
