Ingredients:
- 1/2 cup sugar
- 1/2 cup unsweetened cocoa powder
- 1/4 cup cornstarch
- 1/4 cup semisweet chocolate chips (I use miniature ones)
- 2 cups non-fat milk
- 2 tbsp brewed espresso
- 1 tsp vanilla extract
Preparation:
Whisk sugar, cocoa powder, cornstarch and chocolate chips in a small saucepan. Add milk and bring to a boil on medium heat, stirring constantly. Reduce heat, and stir until thickened. Remove from heat; stir in espresso and vanilla. Pour into four 4-ounce ramekins. Serve warm or cover with plastic wrap and chill.Serves 4.
