If Dad's trying to eat healthfully, here are some great low-fat Father's Day recipes that should fit the bill.
1. Beef Tacos
Seasoned extra-lean ground beef scooped into warmed corn tortillas and topped with reduced fat cheese and a selection of low fat or fat-free toppings.
2. Savory Chicken Breasts
This is a great way to turn boring old skinless chicken breasts into a flavorful treat. Perfect for the grill or broiler. Serve with a crisp green salad.
3. Roasted Spice-Rubbed Salmon
Salmon is full of important nutrients, including omega-3 fatty acids, which our bodies need but can't manufacture. Enjoy this roasted spice-rubbed salmon with some baby potatoes and steamed green beans.
4. Lemon Parsley Halibut
Fresh Alaskan Halibut is a wonderful treat. This low fat Lemon-Parsley Halibut is simple and delicious, requiring no added fat. Simply broil and serve with some rice, couscous or quinoa, and some steamed broccoli or asparagus.
5. Garam Masala Pork Chops With Mint Yogurt
Spice up some lean pork loin chops with some authentic Indian spices. Garam Masala is a blend of fragrant spices including coriander, cumin, cardamom, cinnamon, cloves, peppercorn and ginger. Cool your tongue by accompanying these garam masala pork chops with some mint yogurt on the side.
6. Turkey Burgers
The problem sometimes with lean and extra-lean ground meats is that they can yield a dry burger. This needn't be the case if you add moistening ingredients and don't overcook them. My skeptical husband was impressed at the moistness of these low-fat turkey burgers.
7. Potato Salad With Asparagus
Awaken your tastebuds with this great alternative to ordinary potato salad. A low fat vinaigrette dressing is drizzled over tender baby red potatoes, crisp asparagus tips and slices of red onion. Use green beans instead of asparagus if you prefer.
8. Pea and Mint Salad
A sweet-tasting salad of sugar-snap peas, green peas and freshly chopped mint in a light vinaigrette.
9. Light Chocolate Chip Cookies
Chocolate chip cookies will never be declared a health food, but you can make them less unhealthy by tweaking the ingredients a little. Here's a recipe for a lighter chocolate chip cookie that still manages to satisfy a sweet tooth, but perhaps with a little less guilt.
10. Key Lime Bars
These key lime bars are a creamy, tangy low fat treat. I use regular limes rather than the very small key limes, which makes the job of squeezing the limes a little faster!
