Ingredients:
- 2 cups cooked whole grain rice
- 2 medium ripe tomatoes, chopped, plus juices
- 1/4 cup finely chopped red onion
- 1/4 cup finely chopped fresh cilantro
- 2 tbsp fresh lime juice
Preparation:
Combine rice, chopped tomatoes, onion, cilantro and lime juice in a medium bowl. Toss well. Cover and refrigerate until ready to serve.Serves 6
