Tomato Rice Salad

Microwavable whole grain rice makes this salad a cinch to put together. I choose to keep the tomato juices and seeds to add moisture to the salad. Take this salad along to your next picnic, or serve as a side dish at your next cookout.

Ingredients:

  • 2 cups cooked whole grain rice
  • 2 medium ripe tomatoes, chopped, plus juices
  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped fresh cilantro
  • 2 tbsp fresh lime juice

Preparation:

Combine rice, chopped tomatoes, onion, cilantro and lime juice in a medium bowl. Toss well. Cover and refrigerate until ready to serve.
