Cook Time: 5 minutes
Ingredients:
- 1/4 cup reduced-sodium soy sauce
- 1 tsp sesame oil
- 1 tsp brown sugar
- 1 garlic clove, minced
- 2 tsp freshly grated ginger
- 1 tsp chopped jalapeno pepper
- 4 scallions, finely chopped
- 1 pound medium shrimp, peeled, deveined
Preparation:
Combine soy sauce, sesame oil, sugar, garlic, ginger, jalapeno, scallions together in a glass bowl. Add shrimp and stir well. Cover and marinate for up to an hour.Pre-soak bamboo skewers in cold water. Preheat broiler or grill. Thread marinated shrimp on to skewers4 or 5 per skewer, and broil or grill for 4-5 minutes, turning once. Serve as an appetizer or as an entree with whole grain rice and steamed vegetables.
