Ensure even cooking by flattening the chicken breasts to an even thickness, and remember to cook chicken breasts to a safe internal temperature of 165 degrees.

Prep Time: 4 hours

Cook Time: 12 minutes

Ingredients:

  • 1 cup plain low fat yogurt
  • Juice of 1 lemon
  • 2 tsp paprika
  • 2 cloves minced garlic
  • Freshly ground black pepper

Preparation:

Combine yogurt, lemon juice, paprika and garlic. Place chicken breasts between two sheets of waxed paper or plastic wrap. Pound with a mallet or rolling pin to a 1/4-inch thickness.

Place flattened chicken breasts in a glass baking dish or in a resealable plastic bag. Add lemon garlic marinade. Cover and marinate in the refrigerator for 4-6 hours.

Preheat broiler. Place marinated chicken breasts on a broiler rack coated with nonstick cooking spray. Sprinkle with freshly ground black pepper Broil for 12-15 minutes, turning once, making sure the chicken reaches an internal temperature of 165 degrees Fahrenheit. Option: You can grill the chicken breasts instead.
