This refreshing sorbet is quick and easy to prepare, and needs just a couple of hours to harden. If it becomes too hard to scoop when you want to serve it, bring it out of the freezer for 10-15 minutes to soften a little.

Prep Time: 2 hours, 20 minutes

Ingredients:

  • 1 cup blueberries
  • 1 cup raspberries
  • 2 cups strawberries
  • 1/2 cup water
  • 1/2 cup sugar
  • 1/8 tsp salt

Preparation:

Place berries in a blender with water, sugar and salt. Puree until smooth. Pour berry mixture through a sieve into a container suitable for the freezer. Freeze berry mixture until firm, about 2 hours, depending on dimensions of container. Remove from freezer a few minutes before serving.

For a smoother sorbet, remove from freezer, blend once more in a blender and freeze again for 2-3 hours.

Makes about 4 cups.
