Grilled Apricot Ginger Chicken

Make a simple glaze with apricot preserves and freshly grated ginger, and transform ho-hum chicken into something special. This is perfect for the grill or broiler. The glaze works well with lean pork chops, too.

Prep Time: 5 minutes

Cook Time: 15 minutes

Ingredients:

  • 1/4 cup apricot preserves
  • 2 tsp freshly grated ginger
  • 1 tsp Dijon mustard
  • 4 skinless, boneless chicken breasts

Preparation:

Coat grill with nonstick cooking spray. Preheat grill to medium high.

Combine apricot preserves, ginger and mustard in a small bowl. Brush mixture on chicken. Grill (or broil) chicken for 6 to 8 minutes each side until no longer pink or internal temperature reaches 165 degrees, brushing frequently.
