Ingredients:
- 1/4 cup apricot preserves
- 2 tsp freshly grated ginger
- 1 tsp Dijon mustard
- 4 skinless, boneless chicken breasts
Preparation:
Coat grill with nonstick cooking spray. Preheat grill to medium high.Combine apricot preserves, ginger and mustard in a small bowl. Brush mixture on chicken. Grill (or broil) chicken for 6 to 8 minutes each side until no longer pink or internal temperature reaches 165 degrees, brushing frequently.
