Low Fat Parsley Sauce

Most white sauces are made with a butter-and-flour roux and whole milk. This parsley sauce is made with nonfat milk and is thickened with cornstarch. This sauce goes beautifully with fish, chicken and pork, or your favorite steamed vegetables.

INGREDIENTS:

  • 1 cup nonfat milk
  • 1 tbsp cornstarch dissolved in 1/4 cup fat-free chicken broth
  • 1/2 cup finely chopped fresh parsley
  • Freshly ground pepper to taste

PREPARATION:

Heat milk on medium heat in a small saucepan until bubbles appear around the edge. Add cornstarch mixture and stir until thickened. Sprinkle chopped parsley, and add freshly ground black pepper to taste if desired.

Makes 1 cup parsley sauce
