Enjoy this watermelon and tomato salad at room temperature, which apart from bringing out the flavors, is supposed to allow us to enjoy the maximum health benefits from the watermelon. Like tomatoes, watermelon is an excellent source of lycopene, but it's at its most potent in room temperature fruit. A small drizzle of heart-healthy olive oil, and a sprinkling of low-fat feta cheese allows us to enjoy a great-tasting salad without much sacrifice.

Ingredients:

  • 2 cups cubed or melon-balled watermelon
  • 2 cups grape tomatoes, halved lengthwise
  • 1 tbsp fresh lime juice
  • 2 tsp extra-virgin olive oil
  • Freshly ground black pepper
  • 1/4 cup freshly chopped mint
  • 3 tbsp reduced-fat feta cheese crumbles

Preparation:

Combine watermelon and tomatoes in a medium bowl. Whisk lime juice, oil, and pepper and drizzle over fruit. Sprinkle mint over salad, toss well, then add feta crumbles.

Serve at room temperature.
