Green Bean Salad

This vibrant green bean salad has just the right amount of crunch, a little saltiness, thanks to a small amount of bacon and a sweet tang, thanks to the balsamic vinegar.

Prep Time: 10 minutes

Cook Time: 5 minutes

Total Time: 15 minutes

Ingredients:

  • 1 pound fresh green beans, trimmed
  • 1 slice bacon, with fattiest parts removed
  • 1/4 cup minced shallots
  • 1/4 cup balsamic vinegar

Preparation:

Steam or cook the green beans for three minutes.

Drain, then immediately plunge beans in a large bowl filled with iced water, then drain again and place in a bowl.

Cook bacon in small nonstick skillet coated with a little cooking spray. Remove bacon when it becomes crisp, and set aside. Add shallots to skillet and saute for 1-2 minutes, until slightly softened.

Add shallots to cooled green beans; crumble bacon on top, and drizzle with balsamic vinegar. Toss, then serve.
