Chopped Tomato Salad

What could be simpler? A chopped tomato salad with yellow pepper and red onion for crunch, topped with cilantro. Delicious and refreshing, and not a gram of fat in sight. Make sure you pick the ripest and best tomatoes you can.

INGREDIENTS:

  • 4 vine-ripe tomatoes, chopped
  • 1 yellow pepper, chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, finely chopped
  • 1/4 tsp salt

PREPARATION:

Combine tomatoes, pepper, onion and cilantro in a bowl. Refrigerate until ready to serve.

Serves 4-6.
