Supposing you're making a roast chicken or turkey, and assuming you don't baste the birds with butter, here's how you can make fat-free broth.
- Add vegetables, herbs and about a cup of water to the bottom of the roasting pan before placing the uncooked bird on the rack
- Brush the chicken or turkey with a little heart-healthy canola or olive oil, and sprinkle any dried herbs and spices you wish to use
- After roasting your bird, drain all the drippings and juices into a bowl or measuring jug
- Then refrigerate the broth
- The fat will rise to the top and solidify, making it easy for you to remove, leaving a fat free broth that's perfect for low-fat soups and gravies
