Here's a deliciously sweet low fat vanilla pudding that's a snap to make. And the good news for my husband is that it's gluten free.

Ingredients:

  • 2 cups nonfat milk
  • 1/2 cup sugar
  • 1/8 tsp salt
  • 3 tbsp cornstarch dissolved in 1/2 cup nonfat milk
  • 1 tsp vanilla extract

Preparation:

Heat milk, sugar, and salt in a small saucepan on a medium-low heat until scalded (steaming with little bubbles around the edges).

Combine cornstarch and milk until smooth. Add to hot milk mixture. Bring milk close to boiling, stirring constantly; reduce heat to low and stir until thick.

Spoon pudding into four ramekins or small dessert glasses; cover with plastic wrap to prevent a skin, and refrigerate until ready to serve. Top with some berries.
