Cook Time: 45 minutes
Ingredients:
- 2 tsp canola oil
- 2 cloves garlic, finely chopped
- 1 medium onion, chopped
- 1 small jalapeno pepper, chopped
- 1 tbsp chili powder
- 2 tsp cumin
- 1 tsp oregano
- 1 pound 93% fat free ground turkey
- 1 15 ounce can cannellini beans, rinsed and drained
- 1 1/2 cups fat-free, low sodium chicken broth
- 1 1/2 cups sweet corn
Preparation:
Heat oil in large skillet on medium heat. Sauté garlic, onions and jalepeno until onion has softened, about 6-7 minutes. Add ground turkey, and break apart with wooden spatula or spoon. Cook until no longer pink. Add cannellini beans and chicken broth. Simmer for 25 minutes. Add sweet corn and simmer for 5 more minutes.Serves 6.
