This sweet and tangy pineapple chicken is a quick and easy supper dish. All it needs is some rice on the side. If you like, add more crushed red pepper to give it an extra kick.

Prep Time: 5 minutes

Cook Time: 25 minutes

Total Time: 30 minutes


  • 4 5-ounce boneless, skinless chicken breasts
  • 1/4 cup reduced-sodium tamari or soy sauce
  • 1 tbsp brown sugar
  • 1 tsp minced ginger
  • 1/2 tsp crushed red pepper flakes
  • 1 8-ounce can crushed pineapple


Preheat oven to 400 degrees. Coat an 8 x 8 baking dish with nonstick cooking spray. Place chicken breasts in a single layer in a baking dish. Combine tamari or soy sauce with brown sugar, ginger, crushed pepper and pineapple in a small bowl. Pour over chicken. Bake uncovered for 25 minutes, basting frequently with juices. Serve with rice.

Delicious - But nutritional Info is not accurate, Member benecj

I liked this recipe - easy and very tasty. However, the nutritional information I calculated, based on the ingredients, were as follows (for Weight Watcher folks): Calories per serving 294 Fat 4.35 Fiber 2 Points 6 Please note also this was using fresh pineapple instead of canned and I only used a 4 ounce chicken breast, not a 5 ounce. If I followed the recipe exactly, the numbers would have been higher.
