Mediterranean Pizza

Pizza doesn't have to be loaded with fat. This low fat Mediterranean pizza is nutritious and delicious, needing only a tossed green salad to go with it. This is a great way to use some rotisserie chicken or leftover roast chicken (or turkey).

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients:

  • 1 10-ounce pre-baked whole wheat pizza crust (such as Boboli)
  • 1/2 cup no-salt-added tomato sauce
  • 1 garlic clove, finely chopped
  • 1 cup shredded chicken
  • 1/2 cup sliced olives
  • 1 small jar artichoke hearts, drained and chopped
  • 1 small jar roasted red peppers, chopped
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1 cup reduced fat cheese (mozzarella and cheddar blend)

Preparation:

Preheat oven to 450 degrees. Spread tomato sauce over the crust. Sprinkle toppings on pizza, finishing with cheese. Bake on a pizza sheet or pizza stone for 10 minutes.
