Cook Time: 20 minutes
Ingredients:
- 1/2 cup plain low fat yogurt
- 2 tbsp fresh mint, chopped
- 2 tbsp lemon juice
- 2 cloves garlic, minced
- 4 5-ounce skinless, boneless chicken breasts
Preparation:
Combine yogurt, mint, lemon juice and garlic in a small bowl. Place chicken breasts in a resealable plastic bag. Add yogurt mint mixture, coating chicken. Marinate in the refrigerator for 4 hours.Preheat oven to 450 degrees. Place marinated chicken breasts on shallow baking tray. Roast for 20 minutes, turning once halfway through.
Alternatively, broil or grill the chicken breasts for 10-12 minutes, turning once, until the internal temperature reaches 165 degrees.
