With so many different flavors of low fat sausages out there, you're sure to find one that you can use in a delicious stir-fry. I use a teriyaki ginger chicken sausage, which adds just the right flavor for this quick week night meal.

Cook Time: 8 minutes
Total Time: 18 minutes
Ingredients:
- 2 tsp canola oil
- 3 gourmet-style low fat chicken sausage links, sliced (I used teriyaki ginger flavor by al fresco)
- 1 garlic clove, crushed
- 1 large onion, chopped
- 1 large green pepper, chopped
- 2 large carrots, julienned
- 3 tbsp reduced sodium tamari or soy sauce
Preparation:
Heat oil on medium heat in a large skillet or wok. Cook sausage slices until browned, about 2 minutes. Add onion, green pepper and carrots and stir fry for 3-4 minutes. Add tamari or soy sauce and cook for 2 minutes longer.
Serve over whole grain rice.
