Low Fat Chicken Sausage Stir Fry

With so many different flavors of low fat sausages out there, you're sure to find one that you can use in a delicious stir-fry. I use a teriyaki ginger chicken sausage, which adds just the right flavor for this quick week night meal.

Prep Time: 10 minutes

Cook Time: 8 minutes

Ingredients:

  • 2 tsp canola oil
  • 3 gourmet-style low fat chicken sausage links, sliced (I used teriyaki ginger flavor by al fresco)
  • 1 garlic clove, crushed
  • 1 large onion, chopped
  • 1 large green pepper, chopped
  • 2 large carrots, julienned
  • 3 tbsp reduced sodium tamari or soy sauce

Preparation:

Heat oil on medium heat in a large skillet or wok. Cook sausage slices until browned, about 2 minutes. Add onion, green pepper and carrots and stir fry for 3-4 minutes. Add tamari or soy sauce and cook for 2 minutes longer.

Serve over whole grain rice.
