This is a wonderful way to prepare chicken breasts. The balsamic vinegar marinade and mustard gives the chicken a tangy yet sweet flavor.

Prep Time: 6 hours, 10 minutes

Cook Time: 12 minutes

Ingredients:

  • 1/3 cup fat-free, low-sodium chicken broth
  • 2 tbsp balsamic vinegar
  • 1 tbsp Dijon Mustard
  • 4 skinless, boneless chicken breasts

Preparation:

Combine chicken broth, balsamic vinegar and mustard together.

Place chicken breasts between two sheets of plastic wrap or waxed paper. Pound with a rolling pin until chicken is of equal thickness.

Place chicken in a large glass baking dish or resealable plastic bag. Pour broth mixture over chicken; cover dish with wrap or seal bag and marinate for 6-8 hours in the refrigerator. Preheat broiler and spray rack with nonstick cooking spray. Broil chicken breasts for 10-12 minutes, turning once. Make sure chicken reaches an internal temperature of 165 degrees.
