Balsamic Basil Chicken

Balsamic Basil Chicken

Chicken breasts need never be bland and boring. Add some sweetness and tanginess with balsamic vinegar and fresh basil.

Cook Time: 20 minutes

Ingredients:

  • 1 1/4 pounds boneless, skinless chicken breasts, cut into 4 pieces
  • 8 ounces cherry tomatoes
  • 1/2 cup fat-free, low-sodium chicken broth
  • 1/4 cup balsamic vinegar
  • 2 tbsp freshly chopped basil (or 2 tsp dried herbs)

Preparation:

Preheat oven to 425 degrees.

Coat a large baking dish with nonstick cooking spray. Place chicken pieces and tomatoes in baking dish. Pour chicken broth and balsamic vinegar over chicken. Sprinkle basil over the top.

Bake uncovered for 20-25 minutes, until juices run clear and the internal temperature reaches 165 degrees.
