Low Fat Mexican Pizza

Flour tortillas make a great crispy base for these low fat Mexican pizzas. These pizzas are also one of my favorite ways to use rotisserie chicken or leftover roasted chicken. Serve with a tossed green salad.

Prep Time: 10 minutes

Cook Time: 8 minutes

Total Time: 18 minutes

Ingredients:

  • 4 low fat whole wheat flour tortillas
  • 1 cup salsa
  • 1 cup shredded cooked chicken
  • 1/2 cup canned black beans, rinsed and drained
  • 1/2 cup frozen sweet corn, thawed
  • 1 cup reduced fat Jack cheese

Preparation:

Preheat oven to 450 degrees. Place tortillas on a large baking sheet. Spread 1/4 cup salsa over each one. Divide and sprinkle remaining toppings, finishing with cheese. Bake for 8 minutes, or until cheese is melted.

Serves 4.

I had some rotisserie chicken left over and googled how I might use it - looking for something with ingredients I had on hand. I stumbled across this recipe! In a word - yum! I didn't have any black beans, so I substituted refried (I put them on first - to have something to spread it on), and I had mexican shredded instead of just Jack. It was very very good - and EASY! This one is going into the recipe file. I'll try it with the black beans next time too!
