Zesty Rice and Bean Salad

Zesty Rice and Bean Salad

Made with whole-grain rice and fiber-rich beans, this tasty, slightly spicy rice and bean salad adds a good nutritional boost to any picnic or cookout.

Ingredients:

  • 2 cups cooked whole grain rice, cooled (microwave variety is quick and easy)
  • 1 15 ounce can low-sodium mixed beans or pinto beans (or choose your favorite type)
  • 1 medium tomato, chopped, with juices
  • 1/2 jalapeno pepper, finely chopped
  • 1/ 2 cup cilantro, chopped
  • Juice of 1 lime

Preparation:

Combine cooked rice with drained and rinsed beans, tomato, jalapeno, cilantro and lime juice. Toss well and chill until ready to serve.
