Ingredients:
- 2 tsp canola oil
- 1 medium onion, chopped
- 1 cup sliced green beans
- 1 cup diced carrots
- 1/2 large red pepper, chopped
- 4 ounces cremini mushrooms, chopped
- 1 tsp dried oregano
- 1 cup uncooked rice
- 2 cups fat-free, low-sodium chicken broth
Preparation:
Sauté vegetables in a large saucepan. Add rice, and stir well. Add chicken broth, bring to a boil, then cover and simmer until rice is tender and liquid is absorbed, about 20 minutes.Serves 6
