This is a simple savory rice dish that works particularly well with poultry or fish. For an extra nutritional punch, use whole grain rice.

Cook Time: 20 minutes

Total Time: 20 minutes

Ingredients:

  • 2 tsp canola oil
  • 1 medium onion, chopped
  • 1 cup sliced green beans
  • 1 cup diced carrots
  • 1/2 large red pepper, chopped
  • 4 ounces cremini mushrooms, chopped
  • 1 tsp dried oregano
  • 1 cup uncooked rice
  • 2 cups fat-free, low-sodium chicken broth

Preparation:

Sauté vegetables in a large saucepan. Add rice, and stir well. Add chicken broth, bring to a boil, then cover and simmer until rice is tender and liquid is absorbed, about 20 minutes.
