Lemon Cilantro Quinoa makes a flavorful side dish for chicken or fish. Be sure to rinse the quinoa before cooking. This rids it of its bitter coating.

INGREDIENTS:

  • 1 cup quinoa, rinsed
  • 1/4 cup fresh lemon juice
  • 1/2 cup chopped fresh cilantro

PREPARATION:

Prepare quinoa according to package instructions. When cooked, stir in lemon juice and fresh cilantro.
