Cooking it in the microwave saves time. INGREDIENTS:
PREPARATION:Place rice and water in a microwavable bowl. Microwave uncovered on high for 9 minutes. Remove from microwave oven and stir. Add edamame, lemon juice and mint. Cover and return to microwave. Microwave on high for 5 minutes. Allow to stand for 1 minute. Makes 3 cups.
