Cook Time: 15 minutes
Ingredients:
- 1 cup uncooked jasmine rice
- 2 cups water
- 1 cup frozen edamame
- 2 tbsp fresh lemon juice
- 2 tbsp freshly chopped mint
Preparation:
Place rice and water in a microwavable bowl. Microwave uncovered on high for 9 minutes. Remove from microwave oven and stir. Add edamame, lemon juice and mint. Cover and return to microwave. Microwave on high for 5 minutes. Allow to stand for 1 minute. Makes 3 cups.Serves 6
