I wanted to do something a little different with ground beef, so I added some Thai ingredients and came up with a subtle yet distinctly flavored dish, which I plan on making again and again. Use a bit more red curry paste if you want some heat.

Cook Time: 25 minutes

Ingredients:

  • 1 medium onion, finely chopped (about 1 cup)
  • 2 cloves garlic, minced (1 tsp)
  • 1 tbsp minced ginger
  • 3/4 pound extra-lean ground beef
  • 1 tbsp Thai red curry paste
  • 1 14.5 ounce can crushed tomatoes
  • 2 tsp brown sugar
  • 1 tbsp fish sauce or reduced-sodium soy sauce
  • 1/2 cup lite canned coconut milk

Preparation:

Coat a large skillet with nonstick cooking spray. Saute onions, garlic and ginger on medium heat, until softened—about 3-4 minutes. Crumble ground beef and cook until no longer pink. Drain beef. Add red curry paste, canned tomatoes, sugar, fish sauce (or soy), and coconut milk. Simmer for 10-15 minutes.
