Cook Time: 25 minutes
Ingredients:
- 1 medium onion, finely chopped (about 1 cup)
- 2 cloves garlic, minced (1 tsp)
- 1 tbsp minced ginger
- 3/4 pound extra-lean ground beef
- 1 tbsp Thai red curry paste
- 1 14.5 ounce can crushed tomatoes
- 2 tsp brown sugar
- 1 tbsp fish sauce or reduced-sodium soy sauce
- 1/2 cup lite canned coconut milk
Preparation:
Coat a large skillet with nonstick cooking spray. Saute onions, garlic and ginger on medium heat, until softenedabout 3-4 minutes. Crumble ground beef and cook until no longer pink. Drain beef. Add red curry paste, canned tomatoes, sugar, fish sauce (or soy), and coconut milk. Simmer for 10-15 minutes.Serves 4-6
