Low Fat Crockpot Beef and Black Bean Stew

This low fat crockpot beef and black bean stew makes a warming meal for a cold or wet evening. While it's true that the leanest cuts of beef can be tough, a day in the crockpot will tenderize the toughest of cuts.

Prep Time: 5 minutes

Cook Time: 8 hours

Total Time: 8 hours, 5 minutes

Ingredients:

  • 1 medium onion, chopped
  • 3/4 pound lean stewing beef
  • 1 15-ounce can diced tomatoes
  • 1 4-ounce can diced jalapenos
  • 1 15-ounce can reduced sodium black beans
  • 1 tsp ground cumin
  • 2 tsp chili powder

Preparation:

Coat bottom of a 3-4 quart crockpot with nonstick cooking spray. Place chopped onion in the pot, followed by beef, tomatoes, jalapenos and black beans. Add cumin and chili powder, and mix into the juices a little.

Cover and cook on low for 8 hours.

Serves 4.

Excellent, with a few changes, Member babybunnies

So I made this almost ""as is"", except for the following changes. 1) I doubled the quantity of everything. 2) Browned the beef first, then browned the onions in the same frying pan. 3) Added 2 green peppers. This is yummy. Every time I take this to work for lunch, someone asks me for the recipie.
