Low Fat Spicy Ground Beef

This spicy ground beef uses extra-lean ground beef as its base, and is flavored by Madras curry powder or garam masala if you have it. Add a touch of creaminess with low-fat sour cream. Delicious.

Prep Time: 10 minutes

Cook Time: 25 minutes

Ingredients:

  • 2 tsp canola oil
  • 1 cup chopped onions
  • 4 ounces sliced mushrooms
  • 1 cup sliced carrots
  • 2 ribs celery, sliced
  • 1 1/2 tbsp garam masala or Madras curry powder
  • 3/4 pound extra-lean ground beef
  • 1 14-ounce can crushed tomatoes
  • 1/3 cup low fat sour cream
  • 2 tsp cornstarch

Preparation:

Heat oil in a large skillet on medium heat. Sauté onions, mushrooms, carrots and celery for 3-4 minutes. Add curry powder or garam masala and cook for 1 minute. Crumble ground beef and cook until no longer pink. Add crushed tomatoes. Cover and simmer for 15 minutes. Combine sour cream and cornstarch in a small bowl. Stir in to beef and vegetables. Cook for 1-2 minutes more. Serve over rice.
