Lamb Chops with Mint Yogurt

In general, lamb may not be the leanest of meats but you can treat yourself occasionally with these lean loin chops. Serve with wholegrain couscous and some peas.

Cook Time: 10 minutes

Ingredients:

  • 8 lamb loin chops (trimmed)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • Cooking spray
  • 1 cup plain fat-free yogurt, drained
  • 1 garlic clove, crushed
  • 2 tbsp chopped fresh mint

Preparation:

Preheat broiler and coat broiler pan with cooking spray. Season chops and place them on pan. Broil for about 5 minutes each side, or to desired degree of doneness.

Meanwhile, stir yogurt, crushed garlic and mint together in a bowl.

Serve chops with yogurt sauce on side. Makes 4 servings (2 chops each).
