Chicken Posole is a delicious broth-based soup with just a little bit of a kick. Light yet hearty, this is the perfect soup for a cold day.

Ingredients:
- 1 tsp canola oil
- 1 medium onion, halved, then thinly sliced
- 2 cloves garlic, minced
- 1 poblano pepper, deseeded and chopped
- 1 tsp cumin powder
- 1 tsp dried oregano
- 4 cups fat-free, low-sodium chicken broth
- 1 cup water
- 1 15 ounce can white hominy, drained and rinsed
- 1 ½ cups shredded cooked chicken breast
- 2 tbsp fresh lime juice
- ¼ cup finely chopped fresh cilantro
Preparation:
Heat oil in large saucepan on medium heat.
Cook onion, garlic and pepper for 2-3 minutes.
Sprinkle cumin and oregano and cook for 1 more minute.
Add chicken broth and bring to boil.
Stir in hominy and shredded chicken. Cover, reduce heat and simmer for 10 minutes.
Stir in lime juice and cilantro
