Spicy Red Snapper

Red snapper is a firm, mild fish that can be used in many ways. Full of important B vitamins, potassium and heart-healthy omega-3 fatty acids, as well as an excellent source of protein, red snapper makes a great healthy and nutritious choice any night of the week.

INGREDIENTS:

  • 1 1/4 pounds Red Snapper fillets
  • 2 tsp olive oil
  • Juice of 1 lemon
  • Juice of 1 lime
  • 2 tbsp salt-free Cajun seasoning

PREPARATION:

Place Red Snapper fillets in a large resealable bag. Combine oil, lemon juice, lime juice and Cajun seasoning. Add to bag. Seal and press out excess air. Marinate fish for 15-30 minutes.

Preheat broiler. Spray broiler pan with nonstick cooking spray. Broil red snapper 4 inches from heat for 5-8 minutes, depending on thickness of fish. Serve with rice and beans.
