Sole With Basil and Tomatoes

This is an easy low-fat fish supper that can be prepared even on the busiest night of the week. Serve with seasonal vegetables.

Cook Time: 15 minutes

Ingredients:

  • 1 pound sole fillets
  • 1/2 cup dry white wine
  • 1/2 dry pint grape tomatoes, halved
  • 1/4 cup chopped fresh basil

Preparation:

Preheat oven to 400 degrees. Place sole fillets in baking dish. Pour wine over fish. Top with tomatoes and fresh basil. Bake uncovered for 15 minutes, or until sole flakes easily with a fork.
