Ingredients:
- 4 5-ounce wild Alaskan halibut fillets
- 2 tsp curry powder
- 1 large mango, diced (about 1cup)
- 1/4 cup freshly chopped mint
- 2 tbsp fresh lime juice
Preparation:
Preheat oven to 450 degrees.
Tear off 4 pieces of aluminum foil wrap, each about 18 inches long.
Place a halibut fillet in the center of each foil sheet. Sprinkle a 1/2 tsp of curry powder on each and rub in.
In a small bowl, combine diced mango with chopped mint and lime juice. Spoon equal amounts of mango on top of each piece of halibut.
Seal the foil packets by bringing up two long sides of the foil and folding the top edge, followed by folding the edges of each end. Be sure to leave enough room inside the packet for air to circulate.
Place the packets in one layer on a large cookie sheet and put in the oven. Cook for 15-18 minutes, until the halibut flakes easily with a fork .
Caution: Unseal the packets carefully, beginning with an edge that faces away from you. The escaping steam will be very hot. Remove the fish with a spatula.
