Lemon-Parsley Halibut

Halibut is one of my favorite fish. Its mild flavor lends itself to a variety of flavors. But in this case, I keep things delicate and simple with fresh parsley and lemon.

Prep Time: 15 minutes

Cook Time: 10 minutes

Ingredients:

  • 4 5-6-ounce halibut fillets
  • 1/4 cup finely chopped fresh parsley
  • Juice and zest of 1 large lemon
  • Freshly ground black pepper to taste

Preparation:

Place halibut fillets skin side down in a large glass dish. Sprinkle with chopped parsley and lemon zest. Squeeze lemon juice over fish and season with black pepper. Refrigerate for 10-15 minutes.

Preheat broiler. Spray broiler pan with nonstick cooking spray. Remove halibut from glass dish and place skin side down on broiler pan and broil for 8-10 minutes, depending on thickness of fillet. Allow 10 minutes per inch.

Serve with a rice pilaf, couscous or quinoa.
