Ingredients:
- 4 5-6-ounce halibut fillets
- 1/4 cup finely chopped fresh parsley
- Juice and zest of 1 large lemon
- Freshly ground black pepper to taste
Preparation:
Place halibut fillets skin side down in a large glass dish. Sprinkle with chopped parsley and lemon zest. Squeeze lemon juice over fish and season with black pepper. Refrigerate for 10-15 minutes.Preheat broiler. Spray broiler pan with nonstick cooking spray. Remove halibut from glass dish and place skin side down on broiler pan and broil for 8-10 minutes, depending on thickness of fillet. Allow 10 minutes per inch.
Serve with a rice pilaf, couscous or quinoa.
