Halibut with Basil and Tomatoes

This simple roasted halibut dish is colorful and fragrant. Serve with asparagus and roasted fingerling potatoes for a delicious spring lunch or dinner.

INGREDIENTS:

  • 1/2 cup fresh basil, divided
  • 4 5-6 ounce pieces halibut fillet
  • 1 pint grape tomatoes
  • 1 tablespoon olive oil

PREPARATION:

Preheat oven to 425 degrees.

Coat a cookie sheet with nonstick cooking spray

Scatter half the basil leaves on the cookie sheet, and place the halibut fillets and tomatoes on top. Chop remaining basil and sprinkle on top of fish and tomatoes. Drizzle a little olive oil over each fillet. Roast for 12-15 minutes, until fish flakes easily with a fork.
