Baked Fish with Spinach and Tomatoes

Only five ingredients and one baking dish. What more could you want on a busy evening? This low fat baked fish dish also happens to be highly nutritious. Mop up the juices with some whole grain bread.

Prep Time: 5 minutes

Cook Time: 18 minutes

Ingredients:

  • 1 6-ounce bag of baby spinach
  • 4 white fish fillets
  • Freshly ground black pepper
  • 1 14.5-ounce can crushed tomatoes
  • 1/2 cup reduced fat shredded cheese

Preparation:

Preheat oven to 375 degrees. Rinse spinach and place at the bottom of a glass baking dish. Season fish fillets with freshly ground black pepper. Lay fish on top of spinach. Pour canned tomatoes on top and sprinkle with cheese. Bake for 15-18 minutes.

Serves 4.
